We use only the rare Arriba Nacional bean. Known for its floral aroma and lack of bitterness, it allows us to roast darker without losing the delicate fruit notes. It is the 'Grand Cru' of the chocolate world.
Stone Ground for 72 Hours
To achieve a micron count of less than 20 (silkier than the human tongue can detect), we stone grind our cacao nibs for three full days. This releases the cocoa butter naturally, creating a velvet texture without added lecithin.
